    Looking for ideas here.. Need an appetizer to complement a risotto for 15 people. However there are some considerations:
    It can’t take a lot of cooking as I’m doing it on a 4 ring camp stove which also needs to do the risotto
    It can’t need too many fresh ingredients as I’m in the back country for a few days before it’s my turn.
    It can’t have anything super bulky (like nachos) for example as the ingredients need to be carried.
    Weight isn’t as important as bulk as a machine is doing the lifting.

    Any thoughts?

    Cheese and pickles on sticks.
    Maybe cheese and pineapple chunks for the weak.

    The big problem is the foil covered potatoes to stick them in, unless you can bribe some hedgehogs to sit still.

    Maybe do some bresaola or other cured meats with a beet root and horseradish salad.
    Smoked salmon blinis(buy the blinis) with a cucumber and dill creme fraiche.

    Strip of smoked Salmon on nice herbed cream-cheese on squares of sweet chilli or red/ orange peppers.
    Failing that a Cornish pasty.

    Was going to say bruschetta but I guess you’re going to struggle to get it under a grill.

    Lobster Thermidor aux crevettes, with a Mornay sauce. Garnished with truffle pâté, brandy and a fried egg on top and Spam.

    – Rye bread topped with smoked salmon and sour cream with horseradish
    – You can buy packets of toasted sour dough bread for bruschetta. They are a little hard (Like crispbread) but topped with a little fresh tomato, garlic, basil, ev olive oil and seasoning would be great
    – Potato and courgette rosti with a sauce made from reduced tinned plum tomatoes and basil

    You could do simple mushrooms marinated briefly in balsamic vinegar and a few herbs.

    Found this, not exactly what I was thinking but sounds good

    Make a salmon gravadlax stick it in the bottom of your bag put all your stuff on top and let it cure whilst you do your 3-4 days of riding. Arrive, open bag, slice thinly and await the applause.

    Pots of houmous with toasted pitta bread

    Like sharkbaits idea, but wilth different olive oils and fresh baked bread.

    Cold smoked salmon on rocket, capers cold out of a jar, lightly fried asparagus, pached eggs, good olive oil

    Gas ring 1. Risotto
    Gas ring 2. Asparagus tips
    Gas ring 3. Water for eggy poaching
    Gas ring 4. Halumi

    Salad/rocket on the plate, place smoked salmon on top.
    heat up asparagus/halumi strips, boil water for eggs.
    Add asparagus / halumi and last, the egg.

    Black pepper.

    Simples.

    Make a terrine of pâté before you leave and serve on toasted baguette slices.

    I hope I get into the back country with some of you. I suspect the bruchetta / pate type ideas will be considered and chosen.

    Firstly, it’s blini, not blinis. Make your own – they’re just buckwheat pancakes. I make one large one and use a cookie cutter. Don’t skimp on the smoked salmon – do your own or buy decent stuff from somewhere like the Hebridean smokehouse. Add a good creme fraiche and dill.

    maybe even served on a split log, with a wild herb salad

    perfect!

    No campfire at all? as you could do stone baked flatbreads

    or a bag full of corn on the cob with a roll of tin foil

    All this foreign stuff eh? How about a good old fashioned Black country Salad – Black Pudding and Onion and maybe a little tomato. Or if you want to save your guests from onion breath Black Pudding and Poached Eggs? Black pudding is very portable and eggs just need care.
