    Slight slippage this evening – didn’t know what to put with the glorious Natal red kidney bean curry I’d made for me and Mrs North, so I joined her in some wholegrain rice

    Try gram flour flat breads instead of the rice.

    Just use Mayonaise, but avoid the low fat variety because it has sugar added instead of fat.

    I thought mayo was frowned upon for some reason (going back to the original thread last year)? That’s what I was using then. Will happily revert back to it.

    Quinoniona is actually OK but if you spill some uncooked on the kitchen floor it sticks in your bare feet all sharp like.

    Is Ok.

    As there are very few basic ingredients, once you have got the hang of making them, you just tweak it.

    Personally my flatbreads were coming out a bit thick.
    So I added more water.

    I think some were adding egg.

    Have a play, add some fresh ground cumin seed for instance.

    Get the Mrs to make them, or whomever was making the rice last night.

    Flat breads should be quicker than rice anyway, IIRC.

    Not long if I make them. Minutes 😉

    Not sure, think you can get a day or two out of them, by putting them in the bottom of the fridge, air tight container like a lock-n-lock box, etc.

    Try it and see.

    I make the chickpea flatbreads (see also recipes for farrinatas which is he recipe I been using) . I do them in round cake tins, do a batch of 4 or 8 tins most weeks. Slice them into 4 and you can keep for about a week, or freeze them, they taste good toasted with peanut butter on.

    Gram wraps are a POP to make, and pretty nom nom when you get them right.

    Indian: throw in some cumin seeds, caraway seeds, mustard seeds etc.
    Med: throw in things like tarragon, thyme, marjoram, sage etc.

    Anyone got a fool proof flat bread recipe?

    I made about half a dozen at a time and just keep them in the fridge and reheat. Dead easy recipe

    250g gram flour in a large bowl

    Make a well in the middle and add about 50ml of olive oil

    300ml of water in a jug

    Started whisking the the flour and oil and add the water slowly until the mixture is smooth and not too thick but not too runny. 300ml of water works perfectly.

    I add a bit of salt and pepper and I’ve put some rosemary in too which was lovely.

    Non stick pan on a medium high heat.

    Pour the mixture slowly into the pan until it spreads out and stops moving.

    2 minutes on each side.

    Repeat until all the mixture is used up

    Done

    It’s both vegetable (salad) and dairy (cream), so is actually a super food. Bit like a cheese toastie.

    Pedantry? Oh noes! If it was pedantry then I would have finished the word. As it was, I was making a joke on the oft trotted out trope of tomatoes being fruit.

    I thought it was a lubricant used during the war, when stuff was short. ie, lower than 5′ 9″.

    Heinz Salad Cream:

    Spirit Vinegar, Vegetable Oil (25%), Water, Sugar, Mustard, Pasteurised Egg Yolks (3%), Modified Cornflour, Salt, Stabilisers – Guar Gum and Xanthan Gum, Colour – Riboflavin

    So I guess out because of the sugar.
