This is pretty much a recommend me a bike thread, location really isn’t much of a factor, it’s all just trails..
The fashion at the moment means there’s quite a lot of bikes out there with 140/160mm of squidge, all will climb well and descend well with the right riders on them, however most will bias towards the ups OR downs with most favouring how well they descend.
Budget is a starter, then we can look at whether you like the idea of 2nd hand. From there, you can then start looking at your options around that price.
Now you NEED to test ride some, but local shops will limit you to Spesh, cube, marin, orange, giant and trek, most bikes should be able to be taken out for a day in the local hills, if they haven’t got a demo, they should be able to get one in(maybe) If any other bikes take your fancy, ask about on here and there could be a local willing to let you have a razz on one.
Now you’ve got a bike to try, pick a route, one that maybe you do most, something with a good mix and fair proportion of the riding you regularly do..ride it. Then do it again on another bike..be fair on how you judge them.
IMO it’s worth taking time on choosing bike, i see so many riders just get an ‘X’ brand and ‘X’ model because of looks and reviews, only to be not completely happy, then selling them on quite soon afterwards, to then the next ‘might be the right one’ bike.
