Had a chat with the boss last week during which he peeled three satsumas. There's nothing strange about that - but he did peel them with a knife and then proceeded to essentially 'shave' the white stuff that's left on the segments off with the edge of his knife.

This lead to two discoveries:-

1. He has OCD about fruit being totally clean and peeled
2. He collects knives.

But that's not the question.

He wanted to know how Delmonte (for instance) peel Mandarins etc on an industrial basis and manage to get all the white stuff off.

Clearly it's getting towards year end and my bonus could rely heavily on my being able to answer this.

Quite why I'm asking here is unknown.

FWIW, I hate the white stuff too. So much so I never buy citrus fruits. 😆

"Canned mandarin segments are peeled to remove the white pith prior to canning; otherwise, they turn bitter. Segments are peeled using a chemical process. First, the segments are scalded in hot water to loosen the skin; then they are bathed in a lye solution which digests the albedo and membranes. Finally, the segments undergo several rinses in plain water."
