Anyone care to share your best recipes?

I feel the need to bake.

Imperial measurements cos it's my Mum's recipe and she's too old for metric. 😉

8oz butter
8oz golden syrup
6oz brown sugar
Melt together in pan

Stir in 20oz oats
Vary the amount of oats depending on how dry/sticky you like your flapjacks - less if you want really gooey ones. Can also replace some of the oats with granola if you want slightly crunchier flapjacks.
Add in whatever you want to add - dates, chopped nuts, cherries, sultanas, dried fruit, mixed seeds...
Bake for 25 mins, about 180 degrees

175g butter
200g brown sugar
6 tbsp golden syrup
200g oats
75g Rice Krispies
Quarter tsp salt
100g dessicated coconut
75g chopped dried apricots (ready to eat)
75g raisins

Heat butter sugar and syrup together in a pan until melted.

Turn off heat and mix in rest of ingredients.

Put mixture in tray (not sure exactly what size, I use a grill pan double size of a square cake tin so 20cm x 40cm), mash flat with potato masher.

Bake on gas mark 3/170c for 25 minutes until golden around the edges

Ingredients List:

Makes around 25 bars

2 oz/50g low fat margarine
200 ml runny honey or maple syrup
50g brown sugar
3 oz/75g wholemeal flour
6 oz/150g rolled oats
4 oz/100g chopped nuts (hazelnuts, pecans etc)
3 oz/75g pumpkin seeds
3 oz/75g sunflower seeds
7 oz/175g chopped dried apricots, dates and sultanas mixed
1 oz/25g sesame seeds

(Note: You can change/add whatever nuts, fruit etc to make differing varieties to your own taste/preferences)

Instructions:

Preheat the oven to 180c/340f/gas mark 4.

In a pan over a low heat, melt together the margarine, honey and brown sugar. Cook for a couple of minutes then leave to one side.

Combine together the rest of the ingredients in a large bowl and then pour over the syrup mixture. Mix well.

Pour the mixture into a well greased shallow baking tray. Press the mixture down well to get an even spread. Bake in the oven for 25 minutes, or until golden.

3oz butter
2 tbsp golden syrup

Melt in a saucepan, take off heat and stir in:

8oz oats
2 ripe bananas, mashed
Dried fruit/mixed seeds (optional)

190 in the oven for 20 mins. Lovely 🙂

Crazy-legs is the only one who has posted a flapjack recipe it's pretty much the one I use. You also learn how to vary the butter and syrup in order to make it sticky and soft.

Flapjack is made from oats - not seeds, not rice krispies, it's oats.
It's flapjack, not something you put out for the birds!

Here's my flapjack recipe.

125g el cheapo chopped porridge oats.
125g premium rolled porridge oats.
150g salted butter.
75g golden syrup.
75g soft brown sugar.

(The cheap oats will bind the flapjacks together and help stop them dropping to bits)

Preheat the oven to 170'c.

Put everything bar the oats into a pan on a medium heat. Heat through till it's all melted and the sugar's dissolved. Stir regularly so t doesn't stick / burn.

Mix the two lots of oats in a bowl, then tip into the melted stuff in the pan. Stir it all together.

Ladle the mixture into a greased baking dish, and press flat with the back of a spoon.

Bake for 25-30 minutes, until golden brown.

Slice into bite-sized chunks, leave to cool then whack in the fridge.

Nom.

As an extra, i often mix chocolate or vanilla whey protein in to add some extra flavour and some protein!

How the hell do I stop it welding itself to the dish? I tried butter as usual but this stuff is as sticky as a sticky thing.

I use one of those wobbly silicon baking trays for my flapjacks (very similar recipe to crazy-legs'). Never sticks and dead easy to turn out once cool.

Greased baking tin - leave it to cool for about 5 mins out the oven then turn it out. Leave it any longer and it'll stick to the tin. Or line the tin with greaseproof paper.

one tip i will give you, every recipe given just says oats. depending on the oats used does make a difference in texture to the flapjack. you have normal rolled oats and jumbo oats.

using normal oats will give you a more chewy texture as they dont absorbs the liquids as much, where jumbo oats will absorb more of the liquids giving a more crumbly texture. (also quanties change etc)

the ones i use for riding i throw some mashed banana in there and some dried fruits. and when set put a layer of chocolate over the top.

I let my 10 year old boy loose in the kitchen this afternoon, and all on his own he made Orange and Walnut flapjacks from a bbc food recipy. I can confirm that thay are fantastic. All I have to do is clear the mess before SHMBO gets home.

250g unsalted butter , chopped into pieces
250g golden caster sugar
175g golden syrup
425g porridge oats
50g/2oz walnut pieces
finely grated zest of 1 large orange
3 tbsp fine-cut orange marmalade

Did that on second batch - it stuck to the paper. 😕

I like adding roasted peanuts to mine but wash the salt off first.
