My work DMs (1461 smooth leather) were looking a bit tired so I gave them a polish.

Not keen on the shinyness so want to get them back to the flat matt black.

Any tips on removing the polish? I guess if I do this then apply shoe balm I should get back to where I started.

There are products you can buy specifically for removing polish, prior to using a leather dye, but it might be worth trying something fairly benign like isopropanol, which might well take the shiny polish off, so then you can  use something like Renapur wax, Mink Oil, or other leather softener/preservative.

Acetone will take the polish off. Go gentle. Then renourish the leather.

meths on a cloth should just wipe away the shine but leave the polish.

alternatively... leave it the full shine lasts a day or so and then it will just look normal

I wouldn't wipe the polish away, I'd use something else that's matte finish. I bought some of their leather balm with my last pair, it's matte.
