My work DMs (1461 smooth leather) were looking a bit tired so I gave them a polish.

Not keen on the shinyness so want to get them back to the flat matt black.

Any tips on removing the polish? I guess if I do this then apply shoe balm I should get back to where I started.

There are products you can buy specifically for removing polish, prior to using a leather dye, but it might be worth trying something fairly benign like isopropanol, which might well take the shiny polish off, so then you can ย use something like Renapur wax, Mink Oil, or other leather softener/preservative.

Acetone will take the polish off. Go gentle. Then renourish the leather.

meths on a cloth should just wipe away the shine but leave the polish.

alternatively... leave it the full shine lasts a day or so and then it will just look normal

I wouldn't wipe the polish away, I'd use something else that's matte finish. I bought some of their leather balm with my last pair, it's matte.
