My GF wants to get her son a day at a rally school for his birthday.

He'd like one where you get a lot of driving and not too much sitting about

Any recommendations?

Phil Price in Wales, I have been twice, really good. Lots of driving and you get to go at full speed with Mr price at the end. Good for spectators as well as it's mainly done on a large figure of 8 gravel track in front of a heated cabin, then you drive his full rally stage in a Cosworth (or that's what it was when I went). http://www.philprice.co.uk/

Forest Experience in Carno by Newtown in Mid-Wales, run by the Higgins family. Quite a handy bunch of drivers I hear 😉

another vote for Phil Price
it may not be in fancy cars but you cant beat the old mark 1 and 2 escorts
Real rallying on a proper welsh forest - none of this sliding around at the side of a road racing track
Will learn some proper rally skills as well as how to control a skid
and the high speed runs at the end are awesome, he really does go flat out, nearly took me off the side of the mountain and admitted when we got back that 'that was a little bit closer the edge than I usually get' 😉
Was a good few years since I went but Alistair McRae turned up towards the end of the day, his Hyundai worls rally team were going to be testing there the next day
Still to this day the best thing I have ever done (and that includes the last stage of the 1999 Rally of Great Britain as an 'unofficial' co-driver and going over the finishing ramp - dont ask!)

Two different types for me, not sure if either still exist:
1) Oulton park - about 2/3 of a day, start on a simple figure of 8 (after some chat about safety) and then move up to a mini stage with about 20 curves, covering everything from shift locking, drifting etc.
2) http://www.dynamic-drivers.co.uk/ - a bit more concrete-based, we did some "fun" stuff like J turns, handbrake turns, slalom in a RWD, then moved on to an afternoons competition on the gravel track (40-50 second laps) where you get 3-4 starter laps to learn the ropes, get taught the braking points etc etc, then a series of single laps in different cars, Group N subaru, little 106 rallye (possibly the most fun) and a BMW 3 series, all going full blast and being allowed to completely cock it up and end up in the bushes.
