I have given up on Microsoft office as my day to day work tool and crossed over to Pages and Numbers, however Word and Excel always come up as default for these type of applications. I do not want to remove Office completely, in case I ever need it for some reason, but want Pages to be the default program. Any ideas?

Ok so.

Find a .doc file, then right-click on it to bring up the little menu, and click on 'Get Info'.

Then, in the little Info wndow, there will be a section that says' 'Open with', and a selection menu which will give you options; MS Word, Pages, Text Edit and so forth. Click on 'Pages'.

Just below that it says 'Use this application to open all documents like this one'. and a little button that says 'Change all'. Click this. A verification window will ask you if you want to change all documents that end in .doc. Obviously, click 'Continue', and it will then force all .doc files to open in Pages.

Ta-da! [img] [/img]

Repeat this for your Excel files, to open in Numbers.

Then, once you've done that, get rid of the abomination that is Microsoft Office from your Applications folder, and banish it forever from your Mac. Pages and Numbers files work perfectly with MS Office (although some formatting problems may occur if you make documents too fancy).

I've occasionally had problems with Elfins method - most of the time it works fine.

If it doesn't work you can use Default Apps, and install in the System Preferences panel, which allows to to specify default applications.
