As above - games or useful apps - preferably free but...
WeatherPro, Starwalk, Sky Survey, Kindle, Viewranger.
All these get regular use on my iPad.
I quite like Pinnacle Studio for editing short videos together.
It's not free but cheap and gives you something akin to Windows Movie Maker (with a few more features) without needing to fire up the PC/laptop.
Oh and I recommend Snapseed for editing photos too.

Are probably my used right now.
The included Apple apps are good, it's worth getting used to Pages and I find Notes is useful for lists, a keeping simple records and drafting longer emails. I find bookmarks to the homepage are useful although the new Safari app does that quite well (worth learning features). The iBooks app is useful for storing and filing email attachments (use Open In from email). Aside from that as above I use Soundcloud quite a lot. VLC is a good player and they are improving its ability to access movie files. Vimeo and YouTube.
World of tanks blitz and Kingdom Rush are 2 of my favourite games on mine.

Goodreader is one of my most used apps
