Thought this problem had finished years ago, but assume it's being compounded by Brexit. Anyone know of a (UK) company with an Ultegra 11-30 cassette in stock? LBS says no idea when they might be back in the country.

Freewheel is the public side of Madison. If it's showing as in stock there, your LBS should be able to order one up.

Both 11 and 12 speed show as being in stock with Madison, so your LBS can get one by Tuesday for you.
Woolly Hat Shop or Bikeparts (same firm) got a few 11spd in stock at £56.99 and 12spd at £82.99 if you buy direct from them - slightly more expensive if you go via their Amazon or eBay shops.
As said Merlin have them along with Certini and Tweeks for around £80
Ive just bought a 105 12 speed 11-34 cassette from Merlin for my spare wheels for £40 inc postage
2nd hand 105 12 speed 11-34 cassettes on ebay are going for between £30-£40 including postage
