An omelette with a salad is delightful. One of my fondest eating memories is a plain omelette, green salad and a cold beer for lunch outside a roadside bar near Gap.
Going off on slight tangent, yesterday I had a lightly smoked salmon fillet (a Waitrose speciality) with a homemade rhubarb and apple relish, salad and new potatoes smothered in butter and sprinkled with sea salt. Also delightful chocolate rice pudding for afters.
I did have boiled eggs (and toast) for breakfast though.
