would like to be able to alter shutter speed/iso/focal size etc

Try "Manual Cam" - lets you do shutter speed, focus, White Balance, ISO and EV, but not aperture for some reason.

It's also worth watching these short tutorial videos as there is a surprising amount you can do in the standard Camera app (they are aimed at iPhone 7 but most apply to SE as well):
