Before i google... Anyone got a nice recipe for thai green curry or thai grub in general?
Ony thing is i'd like to avoid coconut milk from a can as i find it too slimy.
went to Thai cooking classes in bangkok a while back.
Very different technique I learnt there compared to UK style.
Take some coconut cream (not milk) and heat in a wok with a dollop of curry paste like that ^ add a heaped teaspoon or so of Palm Sugar to taste. Get the temperature right up, use the coconut cream as the fat in which you fast cook the chicken for a while. Then dilute with coconut milk and poach until done.
Add galangal and kaffir lime leaves if you can find some (Waitrose stock them sometimes)
And don't forget the fish sauce.
If you can't get galangal, ginger is a suitable substitute.
And you will struggle to make a green curry without coconut milk as it is a main ingredient!

look at the jamie oliver 30 min meals one. I've eaten a lot of green curries and this was one of the nicest variations. doesn't take 30 mins though
