My turn to feed everybody at the weekend, I make a fair chilli, but it is a bit spicy for hillwalking the next day....Does anybody have anything flavoursome,smokey..but not too violent?

There's a really good Jamie Oliver Cowboy Chilli in his USA book - made with brisket and muscovado sugar, paprika and coffee. Campfire optional. Takes a while to cook mind...

Smoked paprika is good but a little "delicate", you probablly need some smoked chipotle in a chilli. This does the trick, but don't overdo it.

Just tried to search for the Jamie Oliver one but can't find it. Worth borrowing the book if you can - this is a variation which looks pretty good though:

I have been known to stick a thimble full of smokey whiskey (ardbeg at the moment) in when making chilli or homemade bbq sauce. That and smoked paprika whacks the smokeyness right up!

you need the Hares Moor Chilli kit:

Everything included just add an onion, tomatoes and meat

Little bit of smoked cheese also works, I mean a little, or fry off some smoked Bacon. I find this enhances almost any dish a part from puds. 😀
