Chateubriand is a bit pricey at £30, what else should I look for? To be roasted.
Fore rib? Bit of fat on the outside and not massive and be cut to width to suit.

Rib definitely from a good butcher.
Use a thermometer to ensure you dobg overcook and rest for at least 20 min whilst you make the gravy. Nom nom.
MIL won’t have a rib just as well as she’s cooking this year, she’s put the joint in the over this am. 🙁
We'll be having rib just for two of us some time over the new year, ideal roast for a meal and a few leftovers. Just two or three ribs depending how greedy/extravagant we are feeling.
Come to think of it, don't think I've roasted beef since we did the same thing last year!

How many people for, if not many get a couple of steaks. Easier/quicker to pan fry if the oven is doing turkey duties?
Talking of beef...
I did some brisket in the slow cooker a few weeks ago, kind of poached it. Put some water in the cooker then parcel the joint up with foil, hoy it in for about 4-5 hours, use the juice in the foil for the gravy.

Well - these are great suggestions, but it has been deemed that turkey will be okay. The issue will be with actual Christmas when we are hosting my folks again they won't want it again. So the chateaubriand will be perfect I think.
The brisket slow cooker idea is a good rec for general eating though.

To be fair that was 7 years ago now, though I still have a few joints in the freezer and they are still just as good today as they were back then after he had been hung for 28 days

Yep. And it is perfectly fine. Remember the figures given by government agencies and manufacturers are only guidelines to cover their backs.
EDIT: 1 of the problems with homekill in the UK is that you are not allowed to sell the meat but have to consume it all yourself. A 400kilo beast takes a fair bit of eating on your own (Mrs WF is a Vegetarian 🙂 )

Lot of 'homekill' was used to clear bar tabs back home. Pint and 10 kilos of beef steak could be had for £25.
Anyway, if you ever have a freezer failure WF, I'm only 25 minutes away.
Can I buy a share of a live lamb or sheep that might then meet with a nasty accident?
Soften the sprouts ,cut them in half and put them on the griddle.
