Made a huge game casserole this evening - venison, pheasant, mallard, partridge, lardons, carrots, swede, leeks, garlic, onions, mushrooms; for liquid - henderson's relish, chianti, beef stock, tomato puree, plum tomatoes; for extra yum some 100% chocolate. Loads left so freezing tomorrow.
In the kitchen tomorrow....I'll be making beef casserole using bone-in shin - not mine, obvs.
Wish there was a proper fishmonger in Lincoln - but there isn't; one of the few things I miss about Leeds is Kirkgate Market and the great fishmongers.

Personally I would also invest in a new toilet seat after eating all that....

Cant beat a good beef or lamb stew when the weather turns cold; swede/sweet-pepper/parsnip/leek/carrot/garlic/potatoes .. plus dumplins of course.

That said ... sounds like your recipe decimated the local wildlife; plus never heard of adding chocolate to a casserole!

I have come across chocolate with pheasant. But never a 3 bird and deer stew.

In these straightened times you have to take whatever the hard shoulder gives you.

i might reheat some of my badger, fox and seagull risotto later.

Is the one in the market no longer there? Or head to the coast for some fresh off the boats?

Such as the cut-price sweet shop? And the amazing variety of cuisines on offer in the food hall? Personally I like the butchers at the top end who regularly do offers like gammon offcuts for £1 (great for making into ham & leek pies) or a big bag of sirloin steaks for £10.

Scapegoat - ingredients were fresh...out of freezer! Impressed if you really knew the dates for various types of game.....
Johndo - tried several butchers in the market but unimpressed; always reverted to Wilsons at Crossgates.
Alex - yes, Fosters still on Monks Road; will try them and report back.
It's healthy eating, boys and girls - note use of punctuation.
As for beef casserole - shin of beef is cheap as are root veggies, bottle of strong stout and other stuff; 5 hours before culinary heaven; dark, rich, stuffed full of flavour.

To someone up there ^^^ 3 bird is a roast; my ingredients were diced; game casserole, typically, includes a mix of meats - I would have included rabbit and/or hare but not available when I was buying.
Always important you don't get confused 🙂

@frankconway partridge Sept 1-1 February, pheasant October 1- 1 February, Mallard September 1- 31 January.
Venison depends on species and sex, eg Roe Buck, 1 April to October 31, Roe Doe 1 November to March 31 (England and Wales) ......

To be fair, In this cold weather you could hang a pheasant or partridge for a couple of weeks, and it’s be about right. 😀
