Managed to pick up an old vice locally. As expected, it's covered in surface rust.
The options seem to be: -
Liquid/gel potentially messy and then there's the disposal issue.
Mechanical wire brush, wire wool, glass paper time consuming and labour intensive
Electrolysis could be interesting but needs some investigation as to how.
Any experience?
Take it to an alloy wheel refurbishment guy and get them to shot blast it?
Buy copious amounts of white vinegar, soak vice for a few days, remove residue to discover shiny new vice
Treat immediately to prevent return of rust on raw metal
Molasses will do the same, but that's a bit messier
or if you prefer, you could parkerize with phosphoric acid...

Is this an ornamental vice or will you be using it for time consuming or labour intensive activities ????
It is to be used. Will mostly see duties for cutting a fork steerer, holding a wheel jig, cutting bolts down or servicing a shock.
Just some sort of wire brush attachment in a drill or abrasive on an angle grinder. Maybe some undercoat with rust treatment in it before painting. Job done. Don't over think it.
it mostly wont care that its a bit rusty.
the joy being that if its a bit rusty it'll self preserve.
periodically give it a wipe down with some light oil.

Last one I did I used a knotted wire wheel in an angle grinder, then sprayed with oil and wiped down.
Left a finish like this that has been fine for the last 3 years (not my vice, google images)
Degrease. Then dump it in a homemade rust-electrolysis setup. Doesn't need much. Once the rust has turned black it'll brush off.

Oxalic Acid is pretty effective and cheap.
Either wire wool in a drill, or soak for days in vinegar(or another suitable acid of your choosing)
I'd probably do both, vinegar first, then wire wool if there was still rust present
