Trail centres only;
The beast at coed y brenin.
The Marin trail.
Llandegla black and b-line.
Could do penmachno if you wished. Its wet and boring in my opinion. The last 5 miles are good. The other bits a but dull.
Snowdon down the ranger path and telegraph poles is awesome.
The Clwyd range has some good routes.
The Glyn valley and berwyns is also good.
The you have the uplift days at antur stiniog.

Snowdon in January will be very interesting.
If you like riding in ice and snow crack on.
It will be bloody cold and the winds will bite you hard.
You'll probably be fine until someone gets a mechanical. Trying to fix it will let the cold get you. Once it does you've had it.
Wait until spring if you want to go up there. It's definitely worth doing but you won't appreciate it in Winter.
You can extend the Marin Trail from the halfway point along Sarn Helen for a longer day out. That, and Coed y Brenin would be my recommmendations.
Snowdon? Would have to be pretty mild and more or less snow-free, which is unlikely, or it's more likely to be crampon territory.

Actually, scrub that, gets up to 770m, and I'm not sure if proximity to the sea means it keeps less snow and ice.
