To cut straight to the point, I've not been diagnosed with full blown IBS but I can't eat aliums. So no onions, garlic, spring onions, leeks etc'. It gives me tummy troubles!
Anyone with IBS and with knowledge of FODMAP will know what I'm talking about. It's just been suggested to me that freezing garlic could destroy the tri-saccarrhides which could help alleviate symptoms? Anyone tried it?
I've not tried that but I'd be interested in the results. if you've not seen it before then Monash University does a really good app that let's you see FODMAPs in various foods.
davidr - Do you struggle with onions/garlic then? Any top tips?
I use garlic oil from time to time, seem to get on ok with that. Also use fennel and/or celery as onion substitutes when cooking stuff like curries or casseroles etc'.
My Mrs and myself are both sensitive to onions and garlic (and the family). Her more so than me, but they are both avoided like the devil in our house.
It's when you're aware of what it is, that you realise how much food contains onions and garlic. I wish it had as much exposure as gluten/wheat intolerance.
We have both dropped it from our diet, we don't even cook with garlic any more. We make home made indians without onions and find a curry stock that doesn't contain either (they do exist!)
It seems after a while, we can both tolerate a meal with garlic as a one off (eating out for example is practically impossible to avoid garlic) though she will still suffer bloating. Cutting them from your diet also makes you hyper sensitive to their taste - I can taste an onion from 50 paces these days.
Interestingly, she has a higher tolerance to onion than myself, and I can tolerate garlic more than her.
