Plenty of headphones have inline volume control. Doesn't need to be specifically for the desire

Sure? Mine seem to have just pause/back/fwd controls. Doesn't bother me, the volume on the phone body works even when the screen is locked so I just press it in my pocket.

nope the ones i have only have the music player controls. I put my old iphone headphones in and the volume controls on the headphones don't adjust the music volume at all.

Sony Ericsson MW600 bluetooth ones seem quite good for £40.

They're not wireless and don't have the fwd/back etc you mentioned but if you just want something cheap & decent with a volume control then Play.com have Sennheiser OMX 90 for £13 and it has an in-line volume control. I just set my phone to high volume and use the slider.
