Why do people hide them in general photos, sales photos, google etc? Surely anyone can drive past your house & see them in your driveway.

Possibly, in some cases, not the owner doing the hiding but the host (for liability maybe?), you see it often on TV. Also, I suppose, people themselves trying not to be stung, some people are naturally more cautious than others.

If someone has the same car as you,sees your plate on some website and clones it.. makes up a good looking taxdisc, he could be driving around for a long time as long as he drives sensibly.

maybe i`m wrong. would it be this easy?

However if your plate was to be cloned you might have difficulty in convincing that Police it wasn't really you. If you plate has been published on a public forum then that may be a way of convincing them that it may have been cloned.
