Suppose I wanted to convert an image of a table to text, and retain its table structure... any free tools out there that work well?
I've used Tabula for PDFs, and it's excellent, but it's not OCR so doesn't do images.

You could try uploading an image to Google Drive. AFAIK it does OCR but I've not idea how good it is at tables 🙁

Yeah I just discovered that... converts to text pretty accurately but doesn't retain table structure 🙁
