I've been making cider from garden dessert and cooking varieties I inherited when I moved home 10 years ago. Now my two Dabinett trees have delivered a decent crop for the first time this year. I'm storing the windfalls until the starch has converted and waiting for the rest to drop. Hoping for 40 litres from this year's harvest that tastes a bit more like a traditional scrumpy.
Made some properly with my boss last year.
This year I've gone back to good old Lidl apple juice. Mixed in a bottle of not-great elderflower champagne* from last year into one of the demijohns, waiting to see how that turns out.
*too much lemon, elderflower wasnt fresh enough, didnt ferment completely.
An amazing year for apples here, so much so that the weight of apples on the best tree caused it to uproot. It's not dead, so a bit of surgery might save it yet.
So, so many apples that are producing the best juice ever. Gnusmas and his kids came over a couple of weekends ago and we got them on the picking- collecting- shredding- juicing production line. It was aproper good day.
Two barrels of juice now gently burping away in the kitchen.
