simple Q really... Are there any camper vans that have more than 1 passenger seat (with seat-belt). Or is it possible to add extra seats eg. get car seat + belts from a breaker's yard and bolt them to the floor?

Technically yes. But would you want to be in the seat if you had the accident? I put them in my van's rear bed seat but will remove them as I never really want to be responsible for anything that happened now or in the future.
Many camper vans have 3 seats up front. It means you lose the extra seats when the fronts rotate which can be a problem in smaller vans.
Mine has 5 seats as it has 2 extra seats in the rear with lap belts on one of the bench seats.
You can add extra seats to any van, they need to be properly installed and certified to meet what insurance co's normally ask for tho.

Depends what you mean by 'camper van'. We've got a free top Mazda Bongo- one of the main purchase reasons was that it had proper seating and belts for our two small children and their carseats (seats 7 actually, I think). Obviously it's a bit compromised on space and facilities, but we're happy with the decision.
a multivan chassis on a vw T4 has mounting holes for seats. (such as an old aa van or van with factory fitted windows).
for a panel van t4 conversion you are looking for an expensive riemo or similar conversion for safe seats as the chassis is different and not designed for rear passengers. this is the same for t5's except its easier to get bolts into the chassis for custom fitment of safe seats.
t2's have seat bolt holes but look at the chassis and bolt holes carefully. i cant remember if my t25 had them or not. i think so.
my advice is do do your reasearch well before you commit - ring a conversion company or van dealer and chat about it.
I can only comment on T25 VW's but anything with factory windows will have seatbelt mountings for 3 belts in the back, if you want to use them though I'd be looking for a proper westfalia rock and roll bed/seat in the back, the full width ones from a multivan will take 2 3 pointers and a lap belt in the middle (as long as you don't have a wardrobe in the back - if you do you should use a lap belt in front of it as you don't want the belt passing through the wardrobe), if it's a 3/4 one then you'll be able to fit a 3point by the sliding door and lap in the middle. I'd avoid all non westy conversions if you're using belts though as the rear seats will be made of chipboard and are designed as a decent bed first, seating second and survivability in a crash probably hasn't been considered.
I've ripped out the leisuredrive interior in mine and fitted a westfalia multivan full width rock and roll seat and a buddy seat behind the passenger. I've only been able to fit one 3 point in the back because of the LPG conversion but this way one child seat goes in the front passenger, the other goes in the rear seat with a 3 point belt and the missus sits on the buddy seat with a lap belt, as it's rearward facing a lap belt is fine. Plus she can play with the kids on the move and there are still 2 more seats with lap belts if needed.
