new to this but frustrated recently that although the meats have turned out tender, some of the veg (particularly onions ) haven't cooked well and are still crunchy after 20 hrs on low. are there certain veg that should be sauteed /fried beforehand to make soft ?

Isn't that exactly what you'd want?

I always cook on high when doing a casserole.

Had some lovely shoulder of lamb and veg last weekend. I always start by putting boiling water from the kettle into the bowl first, only need a few hours and the meat starts to fall off the bone.

tasty

I part boil spuds, carrots and some other stuff first. I had the same thing when I first used one.
