Are they all the same? I have a feeling they should be but aren't always...so I'm not sure. Might just be down to the shape of the calipre fitting against the mount?

Have ended up with a 180mm disc by mistake, and am wondering whether I can put any old IS 180 mount on an Avid Juicy 3 (they don't sell a 180 mount) to make them work together and salvage the situation

They are the same - it's a "standard".

yeah but I'm convinced I've had issues previously, and I think it was due to the calipre body not fitting the mount.

The "IS" STD only means the 'holes' will be in the same place, not that the shape of the mounts are the same...

Convince yourself all you like, it's a standard. some early Marzocchi forks had a similar, but not identical, mounting system.

I had a caliper body foul an mount, so i took a file to it. I didn't die and the bike didn't explode either!

Ah if you are talking about fouling then fair enough.

yes fouling is what I meant, and I think bigyinn's comment about filing is what I did to resolve it, memory it's an ace thing, wish I had one. 😳
