probably simple question but can't find the answer:

on avid BB7s, do BOTH the pads move inwards towards the disc like on hydraulics, or does just one of them move and it pushes the disc against the other one?

and what have BB7 got over BB5?

Just one side

Not sure what's better than a BB5, love mine though, get on better than I do my Elixirs.

bb7 you can adjust the position of both pads

bb5 just the outside pad has an adjuster, bb7 are much easier to set up and tweak the pads as they wear

Being able to adjust both pads is brilliant and the main reason I like them. You can get the 'just so' !

On bb7s do the clicks move the pads the same distance I mean does 1click on inner = 1click outer?

having just put pads in the Mrs bike with these I'd say yeah the pads move the same amount

sorry I didn't mean can you adjust both of them, I meant do both of them move towards the disc when braking... if only one does, doesn't this bend the disc slightly every time?

No only one pad moves when you pull the brake lever. The issue you seem to be worried about is no worse than in hydor brakes as the BB7s inner pad is set nearer to the rotor during installation.

BB7s have the other advantage of sharing the same pads as the Juicy brakes so are easier to source.

Yes, only the outer pad moves when lever pulled
Inner pad can be moved to sensible position on the BB7

v minor bend in rotor, surely well within the bounds of elastic(?) return

ok. not near enough for rubbing to be a problem though?

are they fairly "rub-free"?

Very rub free, if your disk is true youbcan adjust the non moving pd to micrometers away
