About 25-30% in winter here. Admittedly the temperature is about -15 to -5 for weeks on end, which dries it out. All the doors shrink in their frames and the floor starts splitting a bit, which is a pain, but we haven’t worked out how to get the humidity higher.
The flip side is in summer it’s around 80%+ and we can’t shut the doors because they swell so much
Generalist, wood stoves do dry the building as they drive so much air up the flue and it’s replaced by cold, drier air from outside. They dry things a good deal, just like any ventilation does.
