The only things I made with pallets were a couple of work benches by a folding machine where I used to work. There were no work surfaces to knock the paper square before loading or after being folded, or doing anything on, so I got a bunch of printer’s pallets, which the stacks of print paper come on, they’re roughly 960x700cm, stacked seven high with a sheet of smooth chipboard hot-glued on top, (the chipboard is strapped on top of the paper to keep it flat in transit), I ended up with two really sturdy work tables that I used for years, and the spaces in between were handy for storing odds and ends in.
If I was going to do something similar at home, I’d pallet-strap the stacks to make them more rigid, hot-glue a sheet of MDF or flooring ply, or else use the original chipboard and seal it, then make up some drawers to fit the spaces in the pallets.
