There seems a huge disparity in price For wireless charging matts which makes me think there must be a huge quality divide too. Never owned one but now in the market for one, what should i look out for or are they all a much of a muchness? Are they like mtb lights in that Cheap chinese ones will burn the house down?

I think mine cost £6, it came with a USB lead rather than a 3-pin plug which is fine as it sits on my desk in work. You need to get it reasonably central on the mat to charge, but there's a light to let you know it's charging.

It charges about as quickly as plugging it in does, but I haven't timed it.

I haven't discovered any reason to spend any more yet.

The cheap ones double as a coffee cup warmer too.

Key diff is the wall charger and the power that can deliver.

Also, the dearer ones should distribute more power. Some methods require licences, so that cost has to be factored in. But cheap = 5W, more = 7.5W and costly = 10W (or possibly more).

higher cost = faster charging (broadly).

If the mat doesn't come with a wall unit, then it is fair to assume that it is a lower power delivery, and therefore slower to charge, and possibly limited to one item at a time, even if more than one item can fit onto the pad.
