I'm going to say demand a shit tonne of cash from whoever runs MMA to stick around.
They've got to be happy with him, it's transformed their sport from "cage fighting freak show" to a proper sport in the eyes of an uneducated mainstream.
Take over the Irish whiskey market.
We should focus instead on who or what Floyd Mayweather has a boxing match with next.
I'd like to see him take on a robot.
Or a kangaroo.
I want to see him fight a shark
Fight Paulie Malignaggi.

To be fair Conor didn't really have much to do with legitimizing MMA, he just benefited from it. John McCarthy is most directly responsible for creating the unified rules of mma and lobbying state bodies to adopt those rule sets. Zuffa's move away from WWE style theatrics along with the rivalrys between stars like Tito Oritiz, Chuck Liddel and Randy Couture built the foundations. Matt Hughes, BJ Penn and GSP also played their part in establishing a core audience which exploded when Forest Griffin and Stephan Bonner fought live on Spike at the Ultimate Fighter 1 finale.
It's been pretty much skyrocketing since then. Ronda Rousey helped them really cross into the mainstream and Conor came along at the right time to capitolise on her fame.

What other possibilities are there for him to earn millions of pounds doing something where his fans will claim afterwards that he won a moral victory despite being completely thrashed?
Judging by all the bollocks he was spouting off about before the fight, I'd say he best enter into politics.
