Can anyone suggest a good vegetarian dish please ?

To include pasta.....just looking for something different, but easy to prepare as time is short...

Does it have to include pasta? Wouldn't something like a wild mushroom or roasted vegetable risotto be just as quick? (assuming you prepare the roasted veg in advance of course!)

or get some some puff pastry, wack some caramilised onions on it, some spinach, some stilton (dependent on just how vegetarian they are) and hoof it in the oven. whallop, caramelized onion tart. you could even serve it with bacon or chicken if they weren't all that vegetarian?

The puff pastry thing works with caramilised red onion, feta and roasted squash too.

Veg Moussaka - red lentils / garlic / passata / griddled aubergines / lasagne sheets - spinach / bechemel sauce (easy whisk up butter into flour add milk slowly with 4 bay leaves) / grated chedar / parmesan
serve with side salad and good chilean red

perfect post bike fayre
in fact going to make it tonight ummmm

macaroni cheese with grilled tomatoes and salad
roasted vegetable lasagne
any pasta with either a tomato or cream sauce as a base - try primavera sauce.
or you could get the canelloni tubes and fill with ricotta and spinach and cover with cheese sauce.

I think you can add meat for meat eaters iirc.

Courgette Lasagne? Google it. We found it on BBC good food site. Nice when served on a bed of ham 🙂

Veggie food is best when it's not trying to copy a meat dish.

Mrs PP does this wonderful Jamaican bean stew. It's out of the Food for Thought cook book. (Food for thought is a veggie restauraunt in Covent Garden, and my favourite eating house in London, actually)

Asian and Indian food is blinding for vegetarians. Tarka Dhal, Papaya or Mango Salads, Aloo Gobi, Sag Aloo, etc, etc.

Pasta based? Kale and Orechiette. Plenty of Olive Oil. Garlic and Chilli flakes. Fry quickly. Chuck in 4 finely chopped anchovies (you can eat fish can't you?) to thicken and flavour. Chuck in cooked orechiette pasta and steamed/boiled Kale and coat with the oil. Done. Literally takes 12 mins prep and cooking.

Sicilian recipe out of Rick Steins Med Adventures. Tastes absolutely fantastic. Best to wait until Autumn for the English Kale though as its much tastier than the tough bitter imported stuff at the moment.

my favourites:

roasted veg lasagne - either with tomato and white sauce or just white.

rfried beans, in a wrap with salsa, salad and maybe cheese.

black bean burgers with garlic corriander (these ones a bit more tricky)

Or try any pasta with smoked tofu, garlic, really good oil, and and dark spring greens.
