I keep them. Not sure why, just in case I need them at some point I guess.

useful, nay, probably essential, if applying for a mortgage or other big loan (e.g. car), to keep at least the last 3 months worth.
Self employed and i keep 'quality accurate accounts' 😉
It is also your proof that your employer is actually paying your tax. Without them you will have a very hard time proving to the tax office that your unscrupulous former employer is who they should actually be chasing for your tax bill.
