If I remember correctly (and that's a pretty big assumption) that's plasma arc from the bits of the projectile carrier and railgun internals, not flame. Well, not really. Well, sort of. Anyway, it's basically shorting a lot of electricity across a sandwich, with two magnets as the bread and the sabot as the cheese. Enough power and a little shove and the cheese flies out the end of the bread very, very, very fast.

Actually, I wish more science was explained using lunch material. Now, can anyone explain String Theory using a scotch egg and a Dairylea triangle?
