Off to Sicily (no bikes unfortunately) with the GF. Have booked flights and a car.
Where's the best place(s) to go?
Taormina on the east coast is fun (Isola Bella). Make sure the GF walks behind you, but don't miss out on the bar with 'special decorative theme' up the hill (assuming it's still there, can't imagine it's not)... Cefalu for beach time as an alternative, but quite mainstream.
Healthy sprint up the volcano, obviously, and surrounding national park.
Agrigento is stunning if you're into classical sites, but a bit out of the way if you're not.
Caltanissetta very pleasant if memory servers.
Definitely don't take the car into Palermo. It's a real nightmare driving, and parking is worse (and very expensive). Better idea to go via public transport / taxi off the plane if you want to visit, then pick up the car on the way out of town.

I stayed in Taormina; beautiful place and has the best pizza I've ever eaten somewhere down the north end of the high street.
Palermo was great fun driving in once you got used to the way they drive but I've lived in London for almost 20 years so am used to cities anyway. Parked and had a gypsy come over to us saying he'd look after the car for 5e. He gave us a handwritten parking note which told everyone around there he was looking after us and off we went.
Go visit Mount Etna as it's really impressive.
It's a big island so you can't see everything. Don't try to take everything in on one vsit. We stayed [url= http://www.long-travel.co.uk/propertydetails.aspx?propid=123 ]here [/url]last year, fantastic place.
The Baroque towns of the South East (Modica, Notto, and esp. Ragussa) are well worth a visit as are Syracuse old town and Archeological Centre.
Take out a collision damage waiver on your hire car 🙂
for outright weirdness and WTFisthatallabout'ness, the catacombs des capucins in Palermo take some beating

Thanks for the suggestions. Well we've got 2 weeks and we're also taking a tent + hammock
It's a mad mad place - if you haven't been to southern Italy, It'll be a real eye opener.
The cappuccino monks are well worth a visit, as is a trip up Etna, but I found other bits a tad meh tbh.
edit: Trip to the volcanic muds on Vulcano are worth a visit too.

Another shout for Taormina, fantastic place to visit. The evenings are fantastic. If you use taxi's make sure you always agree a price up front, it's the only place I've ever been screwed over by taxi drivers. Although it's a non-riding holiday have a look at what's possible....when else are you ever going to get to ride down a volcano! I did and it was fantastic.
