Recipe ideas for left-over gammon

I overestimated the size of the gammon joint we needed yesterday and have a significant amount of leftovers. I don't want pie (for some reason my wife doesn't like it, despite liking chicken pie). So what other recipe ideas do you have?

I ended up in a similar situation one Christmas and made and nice and spicy gammon and sprout risotto. I was purely making it out if the waste not want not mentality and was pleasantly surprised that it was actually really nice.

We always, deliberately, over estimate the size of a gammon, in fact any joint. 

We actually lie to the butcher. For some reason they always say how many is it for? I typically say 10 when it is actually for 3.

More ideas than recipes :

Pea and ham soup. 

Risotto 

We do a sort of ham carbonara

Cold slices in sandwiches with home made spicy cranberry jam, yummmmm

Chicken and ham pie, and eat it all yourself. I usually make a turkey and ham pie with the Christmas leftovers, it's food of the gods.

I've not had gammon since 2016, 52% ruined it for everyone else and it became really salty.

So whatever you do only use the gammon sparingly.

In exactly the same predicament myself, I'm just going to do a few more roast pots quickly in the Ninja, steam some veg, and have another roastie 😃

otherwise: sandwiches. Carbonara is actually a really good idea, hadn't thought of that, except I've already had that for lunch today 😂

Yeah agreed - I soak the joint overnight but I do find it can be quite salty still.

Slice it up, put it on toast with some cheese, Worcester sauce and topped with a fried egg. Posh cheesy hammy eggy!

I soak it, bring to the boil, change the water then boil again.

You can make a plausible tartiflette. Before the peddanterists have a go at me, yes I know it's not the correct recipe, but you can't go too far wrong mixing potato, cheese and gammon.

Tbh if I have left over gammon, I just pig out on gammon, egg and chips the following day or two. Peas optional.

Red lentil and gammon soup is far 'soupierior' to pea and ham.  You did keep the stock from boiling it didn't you?

The next finest thing is a sliced gammon ham sandwich on thick white bread with butter and whole grain mustard

Cold sliced gammon, Chips and fried egg.

We make the chips bit easier (and tastier) by over-specifying the roast potato quantity on Sunday then sauté them again on Monday.

Blob of ketchup. Done.

Ham tagliatelle

Chop up the ham into cubes and add to 3 or 4 cans of chopped tomatoes, mushrooms, onions (fried off) and some herbs simmer for a bit

Cook your tagliatelle

grate a block of Parmesan, grab about 200ml of double cream and a lasagne dish

layer the sauce/tagliatelle/cream/Parmesan a bit like a lasagne, sprinkle some parmesan on top

bung in oven for about 45mins,  with some garlic bread

pour a red wine

et voila
