I'm selling some bike stuff, and I've had payment but not as a gift which is what the buyer said they'd do.
I'm now concerned about the money being reclaimed after I've sent the goods.
Are there any tips or things I can do to limit my risk?

conversely, he's maybe concerned that you don't send the goods after you have his cash
He'd then be in the same situation that you are fearing for yourself

Paypal site is full of advice - Send the goods to a confirmed address, by an on-line trackable service like Royal Mail. If I recall, he/she can't then claim they weren't sent and has to send the goods back to you at their cost if they want a refund.
Ask them to add on a bit extra if they are not paying as a gift to cover your paypal fees.
To be honest I don't think there's much of a leg to stand on if you don't send and it's outside of eBay regardless of gift or not.
