We have friends coming over on Saturday and we are cooking for them. As there will be a house full of children and I would rather socialise than cook, does anyone have any recommendations for good 'one pot' meals - just want to prepapre it, chuck it in the oven and open the wine.

It CAN'T be fish as one of the party flatly refuses to eat it.

Currently thinking about doing lamb kleftiko but does anyone else have any suggestions.

Depends how posh you want to be - lots of pasta dishes can be made in one pot, as can Paella (minus the fish), Stew, hotpot, there is a agreat italian chicken dish with lemon and olives that cooks in one pot, as above how posh do you wanna be?

Make a big casserole the day before - leave it overnight to get super tasty. Reheat on the day - do some mash

Easy

Beef Bourgignon. No problem at all and the nice thing is you can leave it in the oven for ages on a low heat.

Nice vegetable lasagne. Not as heavy as the meat version so you can eat more 🙂 Can be made up the evening before and then just popped in the oven.

you get to open wine to cook it so get a head start, needs some spuds to pad it out but very nice, we add more of everything when I do it 😀

Lancashire hotpot, lovely, Nigel Haworths recipe won the Great British Menu and is simple to do.

Pot roasted Beef Brisket, season and brown it in a big heavy iron pan in olive oil. Add onions, garlic and mushrooms and sweat, then a load of root veggies in with it. Add a splash of water, and scrape the brown bits off the bottom of the pan. Top up with water so it's almost covered, couple of glasses of red wine or stout if you fancy it. Chuck in a bay leaf and a dash of cayenne pepper and bring to the boil. Put the lid on and transfer to the oven (160C). Just put it on in the morning and chuck some roasties in when you need them. Depending on size, a 1kg joint will be done in five hours.

I'm no master chef but Brisket done well is always a winner this time of year.

fry some onions in a big saucepan, add 6 chicken breasts, 3 cans of coke, 3 cups of ketchup, 4 cans of broad beans, and let it simmer until stewy and thick.

1 or 2 lamb shoulders pot roasted at a low temp for 5 hours with chunky wintery veg, strip it off the bone and shred it into the same tin with the 'gravy'. Serve with another big dish of dauphinoise or boulangerie potatoes.

I'd go with Kleftico but I'm Greek so I would.

Another good one is

Brown some chicken or lamb pieces (not too fatty) in a large, heavy bottomed and lidded frying pan, add some crushed garlic, a generous handful of oregano, a few bay leaves, some honey then add about 2 glasses of white wine, chicken stock and the juice of a lemon to cover, cover and cook for a fair while on a very low heat.

Roast some cubed spuds and mixed root veggies until uber crispy and when ready to serve, pop them into the frypan for the last 10 minutes or so.

Everyone I serve that to likes it.

However, to get it right, you need to pronounce it panackelty, you need to ignore any Internet recipes that don't use potatoes, corned beef or sausages.

dead easy to prepare -

mix 4 chicken breasts, lots of mushrooms, 2 glasses white wine and lots of fresh herbs like rosemary & thyme and salt and pepper. Leave in a bowl a bit, then pour the mixture into a foil wrap and close as best you can. Then cook at 200°C for 20-35 mins.

The best chicken i've ever had..and so simple. You do it all beforehand (and buy chestnut mushrooms so you dont even need to peel them) and cooking is short..

If you really want it easy on the day then make something in advance.

Last big meal I did (15 people), I pot roasted some beef brisket overnight in wine. Once done, I removed the skin etc to be left with a tray of meat. I made gravy from the juices in the pot and put some gravy over the meat. I also made another dish of potato dauphinoise.

Then on the day I just put two dishes in the oven to warm up, heated the gravy and quickly cooked some veg to go with it.

Great for Autumn. One pot and ready in about half an hour.

Fry sliced 'cooking' chorizo and chopped onions in a deep lidded frying pan until onion soft and chorizo releases its tasty oil.
Add garlic and a 'hard' herb of your choice, bit of smoked paprika if you have it.
Add in some unpeeled potatoes cut into 2-3cm lumps.
Throw in a couple of deseeded chopped tomatoes.
Pour in vegetable stock until not quite covering the spuds. Add a little tomato puree. Stir.
Lid on, simmer for 8-10 minutes or until spuds nearly cooked.
Lid off, let liquid reduce a bit then stir in 2 cans/1 big jar of butter beans.
Taste & season.
Once beans are heated through give it another stir - the spuds should just begin to break up on the edges and thicken the liquid that is left.
Serve.

Awesome.

Chorizo butter bean and tomato stew. Can add potatoes for bulk into the cooking pot or serve with bread and salad.
Something similar can be made with pork belly, haricot beans, cider and onions and garlic. And herbs. Again serve with bread and salad.

My fave is Hugh Fearnley-Whatsisname - One Pot Chicken + french stick - splash out on a decent chicken and fresh 'erbs.

Thanks for all the suggestions - it has given me food for thought.

Will struggle with anything needing a casserole dish as ours is only large enough for two (which was why I was thinking of something like kleftiko as I have two large flat oven dishes to cook it all in - sorry I should have said)

Stoner - could you post up the lamb with orange & chickpeas recipe please 🙂 (even if I don't have the pot needed this time around I love the sound of it.

Joolsburger - do you have a killer recipe for kleftiko then, given you are Greek 😉
