Theres loads of "Microsoft security updates" on the add, or remove, programs part of the control panel,some from as early as 2007
They must be using up memory?
Can I delete these, or do I have to download servicepack 3 to get rid of them?

No. They overwrite or extend crap software. The don't use memory unnecessarily. Newer updates may have overwritten them, but if that's the case then they're effectively gone anyway.

They're not using memory - but ARE using disk space. This won't be slowing your system down any, so leave them be.
Oh - and download SP3 anyway
