What's the best way to do this on a Mac?
I want to produce a slideshow of photos with various bits of songs from my iTunes library to accompany it

Use imovie. Works great for this task. You can edit together, pan and zoom the photos and then put music from itunes over it. Then publish to Youtube or burn to DVD etc.
It's very very simple to use. Self explanatory once you open imovie up.

iPhoto does it too. Just make an album and attach the music.
