Looking to spend around a grand or so including flights (for two people, not a huge amount I know!), ideally I'd like something fun & adventurey, probably in Eurupe I guess (to keep the flight cost low), keen to camp/hostel and self cater... one idea I've had is to pick two random airports around 500km apart and then ride our Bromptons between them? Or, I've always wanted to try via ferrata, can you just rock up and give that a go?

You can rock up (pun intended) and do via ferrata routes, but you need to take / hire the kits and helmets. Pick the route carefully and provided you know how to use the kit and are confident on rock (and how to recover should a fall occur) you'll have a blast. Italian stuff in the dolomites is predominantly historical with fixed gear to match; the french have a more sport atmosphere with routes that deliberately seek out exposure and fun rather than just how-to-get-a-machine-gun-somewhere-improbable.
As an alternative two weeks is just about long enough for the GR20 in Corsica, and late summer's a good time as it's a little cooler.
How tough is the GR20? Is it technically challenging, or just endurance challenging?
