My mum is on holiday so you lot will have to do 😀

I've defrosted chicken breasts for tea later but have now had a change of food plan. If I cook it up as another meal can I then freeze that meal or will I kill myself as the chicken will actually have been frozen twice?

Ok, I have another question - what can I make with 4 chicken boobs?

I have in the cupboard:

Peppers/onions/sweet potatoes/ 200 ml of coconut milk to use/bacon/curry paste/tinned tomatoes/spices/potatoes/rice/mushrooms/red lentils/mixed beans and other usual store cupboard stuff.

Stuck though. Any ideas?

Nice and simple chicken and lentil curry, that's what I'm having for lunch.

Yeah dead easy chicken and coconut curry with mushroom rice

Cook the lentils.
Fry up the chicken, then add the onions and pepper and fry until softish.
Add the curry paste and tomatoes (best if they're in bits not whole) and water.
Throw cooked lentils into the mix and simmer until ready.

Served with peas or other veg.
Pukka!

I'd definitely go for a chicken and lentil curry too...

I'd start by Googling chicken and lentil curry.

emma - it astonishes me that you're married. Are you really good at ironing or something?

Edit - the answer is yes it will freeze fine. Perfect for taking to work and heating in the microwave too.

It's not my fault my mum is swanning around menorca for two weeks is it?! Yes I am married and trying to learn to cook but I really do not have a clue. So far my new meals have been:
 roast chicken soup
Chicken & mango stirfry
Bacon, bean and pasta soup
Veg curry (v nice) 

I'm learning but my knowledge of food spans literally from beans on toast through to dominos pizza. Today I have eaten something with aubergine in it and I've never had aubergine before. Up til now its been salad and something grilled if am 'making' something.I really genuinely know nothing about 'cooking'. 

Edit: oh and nope, can't iron either 🙂 I'm such a catch.
