i interviewed an administrator yesterday and everything was fine
i decided pretty early on in the interview that she would be suitable but she threw me a little with her last question;

"can i have day/days off for the religious holidays of my faith?"
i said that in principal yes

the question is can i insist that they are taken as part of her annual entitlement?

i wasnt very clear earlier. but same as uplink says. days off come out of entitlement. but they are allowed some hours to go and pray during work - but this is usually taken as flexi time
