I've got a kit with the gel in it that seems to be based on sodium hydroxide. I've used it before and it's great at cleaning dried on gunk. It says it's suitable for the glass and racks (which are stainless, I assume), but I want to know if it'll be ok on the brushed stainless steel on the front of the oven? I'm assuming the SS will be unaffected by NaOH?
The stainless will be fine.

I’m sure mol is well able to look after himself, but caustic is dangerous enough by itself. I wouldn’t advise using KOH in a kitchen. It’s a bit more toxic than caustic. 😀

Well according to Wiki water is amphoteric (I had to look it up) so that probably doesn't mean much. Wear gloves, make sure the area is well ventilated and wear clothes that it wouldn't bother you to throw out and you should be fine.

It's fine, you don't do it everyday.. you presumably have a mask, gloves and some vinegar
Seriously though I'd check the brushed stainless actually is.
As it happens I have a tub in the garden at the moment... stripped a stem and bars the other day and it's remarkably quick. It's full of anodising dye at the moment and might go and play with it and see if it will recoat a aluminium can for kicks...

DIY but I find brillo pads and Screwfix degreaser do a pretty good job. Caustic is perfect for removing organic matter as it will break up proteins, fats, and other stuff. But won't really do much for the burnt on carbon, that just needs removing mechanically.
I've just cleaned the vertical steel plate at the back of the cooker. Tried all sorts but ended up with oven cleaner. I did think about oxalic acid but the oven cleaner sticks nicely. It wasn't left on long because of the concerns expressed above but the results were impressive. It was neutralised with vinegar.
Ours is too far gone for soap and scrubbing, I've tried. The issue is the polymerised fats.
I think with the doors I'm going to remove them so I can rinse them off, either in the kitchen sink or the bath.
Are your doors glass? If so making a paste of bicarb will do the trick.
I was impressed by HG Oven cleaner (as their mould stuff is excellent) and though it does contain lye, it's wasn't noxious to use. Took a couple of passes to clean the oven windows, but then it hadn't been cleaned in 10 years, so that was acceptable

Tried that, also tried mild acid (citric), no better than abrasion.

I'm reading this as a poignant and melancholic elegy to our youth; however great our dreams were, ovens still need cleaning.
If only it were just oven cleaning. I could cope with that.
Does it say 'amphoteric surfactants' rather than 'amphoteric compounds'?
If so, they're essentially fancy detergents. I probably wouldn't want to use them as a shower gel but I doubt they'd do much to stainless steel.
I've no idea if they might use brushed aluminium in place of stainless on the front of an oven, but the NaOH will likely make a mess of that if they have. Is there a discrete bit you can try a patch on?

Whats the max temp setting for if not for putting off cleaning the oven and testing the smoke alarms in one go?
Don't some SS ovens have a 400C mode which just carbonises everything and all you need to do is brush out the dust?

I use it on the glass door only, though if youre careful you can use it on the enamel, but best on the glass and it works without scratching. Works best if the oven is warn but not hot enough to burn yourself with, the residue comes off the glass far easier.

I used to work for a company that made oven cleaners amongst other cleaning products.
Caustic based oven cleaners are great and won't affect stainless steel. DO NOT get it on any Aluminium, Zinc, or painted surfaces.
When you heat the oven up switch it off before spraying or the fan will blow it back in your face.

Apart from the aesthetics, I wonder why an oven needs to be cleaned. Nothing nasty can survive in there, so why clean it? Just turn it on full bore for a while and kill everything dead.
Harpic 10x brushed on gently with a toothbrush will clean stainless steal in seconds. It’s found in the toilet cleaner isle in a black bottle.
Hot caustic cleans anything really - will go right through any food stuff - it's what they use in breweries who use stainless vessels and tanks
I find the glass on my oven doors cleans up well with washing-up liquid and one of those shiny pan scrubs that looks like a bundle of swarf. Wipe with a damp cloth after and it’s OK.
The rest of the oven? I just leave it unless someone took out the drip tray and let stuff fall onto the floor. Then I just scrape that up and carry on.

Top cleaning tip: Hang a tea towel over the oven door handle, that way you can't see how dirty the glass is.
