Marathon De Sables. If you can get a place on it, that should really push you.
Failing that, have you considered something like the Alcatraz Ironman? Three sports in one and a lovely location to do them all in.
What's the project?
alcatraz ironman sounds interesting...

Endurance Life are putting on the first off road Iron Man* in 2012.
Also look at the Norseman Tri, which is aparantly the hardest Iron Man race.

29erkeith, i may get in touch at some point, if thats ok!
I attempted the English Channel last year as a solo swim, having a go at the Devices to Westminster canoe race next year. 125 miles nonstop paddling runs over Easter weekend. Should take about 20 hours to complete.
Arch to Arc London to Paris triathlon
Cook Strait Swim Swim from north to south island in NZ (my girlfriend has done this and the Channel)
Kepler Challenge 60 km off-road run
And I've done both Tour Divide and Iditarod Trail Invitational.
Don't forget the strathpuffer.
Bike only but what views!

fantastic, thanks
aidan, i might get in touch with you too, perhaps!
Devises (sp?) Westminster is a famous route in canoeing circles. You'll need to find a partner to do the one day race thoug.
There's one on the Yukon as well but that's harder to get to on a weekend.
When we were in BC there were some people racing down the coast of Canada in seakayaks.
There's the Green river race which is only short but challenging!
@ hungry monkey, yeah no worries email in profile
