Got some packets of Wrights that are close to expiry. Before we make the bread and freeze it can we just freeze the mix?
It should keep ages, I wouldn't pay much attention to the dates, might just need to pop some fresh yeast in before use though
Dont know - but we buy frozen pizza dough from a local Italian food wholesaler. It makes great pizza. So why not make a load of dough and freeze that.
I'd just be ignoring the expiry date myself! Is it a Use By or a Best Before?
You could make the dough and then freeze it - it will keep for ages.

We had some that went out last year. They worked fine with some extra yeast added.
If it's just dry I think freezing it will make any difference. It'll be fine for years.
Obviously the proper STW answer is that you should throw it away and bake yourself some proper sourdough though ;-P
