After some advise or pointing in the right direction.

So I want someone to come to an event to sell there beer (with Licence)

Would it be the same as a food vendor, i.e. don't have to pay for them to turn up and they keep all the money they make?!?

Ideally (like the food vendors) they would be paying you for the pitch and would then keep what they make.

food vendor does not pay for pitch but does provide marshals with food and coffee. Not sure its best idea to get marshals booze 😉

Ah, I see.

In that case still charge them for a pitch (or negotiate a profit share) 😉

Their: it belongs to them.

You need the second one in both cases.

In the dim and distant past at Hit The North the food vendor didn’t pay for a pitch and kept all the profits but they also took all the risk. The deal was that they kept the organisers refuelled and provided the marshals with a bacon roll and a brew. They also had to bring their own bins and had to take away all of their own rubbish.
We had a similar deal with the beer tent. The first year they made a load of cash, the second they took a big hit.

You also require some form of alcohol licence as well.

We do 20% of takings on beer and food and they sort licence. We also sort a price for a meal for staff and a pint at the end of the day. Also have a staff kitchen for tea/snacks and warmth!
