If she is big lass, go for a flow, else the crest should be fine.
Crest, Flow is overkill - unless she's DHing
Flow will be easier to get the tyre on and off though.
Almost certainly won't notice the width, but might notice the weight, also might notice the strength. Flows are strong like ox, most people don't need that (I treat mine as an insurance policy, I certainly don't need it day to day but every so often I ride head-on into trees and such 😉 )
