I currently have xt shifters (2 x10) the 2012 kit. . Can I use these If I change my setup to 3x10 or 3x9?

If they are SL-M780 shifters then the left hand will have a mode convertor on the bottom to change from double to triple so yes, 3x10 will be fine.
The right hand is 10 speed specific so 3x9 won't work.

Thanks, I have a switch on the bottom so that's good. . I can use it for a 3x10 set up. .
